Eggless Chocolate Cake Recipe - Revisited

After my recent post about egg substitutes, I tried using them to revisit my old eggless chocolate cake recipe! Eating a cake is sinful for some, but not with this recipe that uses whole wheat, no eggs, minimal butter and all the goodness of chocolate! Cakes and desserts don't necessarily have to be elaborate and high in calories - this simple, healthy and wholesome cake is a classic example of how you can indulge without being overly guilty! The ghiradelli chocolate that I used gives it a rich texture, and the applesauce and sour cream make it soft and smooth without using eggs! perfect for a weeknight dessert, this eggless chocolate cake recipe is for keeps!

Ingredients
1 cup wheat flour (or whole-grain pastry flour)
1 cup all-purpose flour
1.5 cup powdered sugar
1/2 cup applesauce or 1/2 mashed banana
2 tbsp cocoa powder
1/4 cup semi-sweet chocolate chips
1.5 tsp baking powder
1/2 tsp baking soda
1/4 cup sour cream
4 tbsp unsalted butter - at room temp
1 tsp vanilla essence

Note: you can skip the butter altogether if you use AP flour; but with wheat, you do need the butter to make the cake soft.

Method
Take a bowl and mix the sour cream, butter, applesauce (or mashed banana) and essence properly.

Seive the wheat flour, sugar, cocoa powder, baking powder and baking soda. Now add this to the sour cream mixture and beat properly in one direction. Whisk continuously for 5-7 mins till the mixture starts to fold and form peaks.

Melt half of the chocolate chips in the microwave, then add this to the cake mixture. Add the remaining chocolate-chips and blend in to just fold everything together.

Preheat oven at 350 deg F.Grease a 9 inch cake pan with non-stick spray. Pour the mixture into it. Bake for about 20-25 mins, or until a toothpick inserted into the center comes out clean.

Microwave Method
You can also pour the cake mixture into small ramekins or microwave-safe bowls, then bake on high for 8 mins. Repeat this for another 8-10 mins, until the cake is done.

Allow the cake to cool completely on a wire rack. Then slice into wedges, dust with some powdered sugar, and top with a few berries. Serve this delicious Eggless Chocolate Cake to your guests, or indulge in a guilt-free dessert yourself!

Being vegetarian, health-conscious AND a cake-lover, I tried out your recipe and it worked great. Thanks. I have heard some people adding Coke to the cake mixture as well but they use sweetened condensed milk instead of plain milk. Do you think it would work in our recipe as well?

Hi, thanks for trying out my recipe, and I'm glad you enjoyed it! I've nevr heard about adding coke to cake, though logistcally, it might work as carbonated drinks will give the rise to the cake while baking, and condensed milk will make it creamier and give it more softer texture.

Its new to me, but I'll try it sometimes and see how it comes out:)

or simply use plain yoghurt instead of sour cream, and if that's not an option either, than just use 4 tbsp cooking oil.

Charlene - are you looking for gluten-free recipe? or is All-purpose flour ok? if Yes, then just use AP flour instead of wheat flour and follow the recipe.

If you want to substitute both kinds of flours, I think you can use mashed potatoes. or even rice flour. Here are a couple links you might find helpful

I tried this recipe and when I got to the step of combining the wet and dry ingredient there was so little liquid that I basically had clay. I am still trying to figure out what went wrong since I followed the directions for the mashed banana version.

Did anyone else have this problem?

HI Jillian,

did you use butter at room temp, and whip it nicely with sour cream? generally, this mixture, along with melted chocolate should provide enough consistency...also, you are using the correct cup/spoon measurements, right? b'coz these are really important in baking, esp eggless baking....

here are a few other things you can try:
1. add 2 tbsp vegetable oil to the recipe right after adding melted chocolate
2. reduce the whole wheat flour to half cup instead of one
3. keep everything else the same and give it a shot again.

and remember, the more you beat the butter and sour cream, the better texture you'll get.

try this version and let me know how it goes, so i can update the recipe with the info. HOpe this helps!

OK, just made it. It was fantastic. Made a few changes.
added, milk, cream, yogurt :) and no soda. AS we had no bananas and applesauce. It was delicious. Thanks for the recipe. Will post the recipe in my site soon :).BTW, made the changed because we did not have some of the ingredients.

what is wrong with egg.. lots of minerals and vitamins in egg.. butter is purely saturated fat.. I think I would a egg in the recipe would be better than butter.. replace the butter with flaxseed - now that would be healthy.. and also cut down on the sugar too!!

That is a nice recipe which I tried but with not the same result. Cake is dense in the middle. I live in India & don't get GhiradelliChocolate in our markets & used unsweetened cocoa powder. Maybe due to lesser liquids cake texture didn't turn out well. Can you please give an alternative list with cocoa powder?
