Cucumber and Cilantro Dip

Ingredients
1 cup of low-fat (light) sour cream
1 fresh cucumber
a fistful of cilantro - finely chopped
6-7 mint leaves
1-2 tbsp lemon juice
salt - to taste
3 green chillies (choose the spicy ones)
Method
Mince the green chillies, cilantro, mint leaves and cucumber in a blender with one spoon of sour cream. Puree to make a smooth paste. Add this to the remaining sour cream. Add lemon juice and salt and mix well. Transfer to a serving cup and garnish with some mint leaves or cilantro and lemon rind. Enjoy this cool and refreshing dip with your chips, veggies or just as a side dish!

Yum! This looks tasty. Reminds me a little of raita. It's so great to make your own dips and not deal with all the artificial junk and hydrogenated fats in the commercial stuff. Mmmm, I may just have to make some and track down a bag of organic potato chips.
